What's the Red Natural Process

Initially, cherries are carefully washed, and any floating ones are separated. Subsequently, a color sorting machine selects cherries based on their color, followed by manual sorting into distinct categories, such as vibrant reds and oranges. These categorized cherries are then spread out individually on African beds, where they spend 15 days under shade and an additional 15 to 21 days drying.

Once adequately dried, they are moved to drying chambers and allowed to cool for 48 hours. After this cooling period, the cherries undergo a meticulous process to remove the pulp.

This detailed journey results in an exceptional coffee, reflecting the dedication and precision applied at every stage of the process.

Yirgacheffe

Yirgacheffe coffee, renowned worldwide for its exquisite quality, boasts a floral, jasmine-like flavor and a highly aromatic profile. This exceptional coffee is cultivated in the small region of Gedeo, Ethiopia, where elevations range from 1700 to 2200 meters, and annual rainfall reaches 1300MM.

The name 'Yirgacheffe' translates to 'green water farm,' and visiting this special place reveals the aptness of its name, as it truly embodies a lush, vibrant oasis.
