    Our first Indonesian coffee this year for Kurasu. We really fell in love with the vivid fruity flavors exceeding our expectation when we cupped.
    This partially comes from the combination of traditional Sumatran wet hull process and honey process.
    This coffee was a bit of a challenge for us in terms of roasting.
    With our usual profile, the coffee was overroasted on the inside, making the coffee too acidic.
    After a few test roasts, we opted for turning off the gas during the last 1 minute of development, using only the heat stored in our Giesen roaster.
    As we made the final adjustments to shorten the timing to cut off the gas, we saw move flavors such as sweet plum wine, hibiscus, and oolong tea coming out.
    For extraction, we recommend not too much agitation or trying to force out the flavors—similar to the approach we took for our roasting.
    A coarser grind and a V60 or Origami should do the trick, keeping it simple as possible.
    Hopefully youll enjoy the complexity in the coffee as we do.

    Our Roasting Schedule
    We roast all of our coffee in Kyoto, at our Fushimi Inari roastery, twice a week on Thursday and Sunday.
    We then pack and ship the freshly roasted beans out as early as on Monday, Wednesday and Friday (please note that our fulfilment operation closes on weekends.). The roasting date on your coffee will be between 14 days prior to your order, and while we try our best to ship as younger roast as possible, we actually recommend you waiting at least 1 week after the roasting date to enjoy the fully developed flavor, so if you receive a very fresh roast please let the coffee rest for about a week and give it a try!
    *Please note that any order made after 12pm on Wednesday and Saturday will likely to be fulfilled on the next week’s roasting day.
