"For this year's summer blend, I have selected beans and set up the roast profile to create the best blend for cold brew coffee. Unfortunately, the refreshing and delicate flavours and aroma of light roast coffee are difficult to bring out in low temperatures. When it comes to drinking cold brew coffee, we often look for mellow sweetness and mouthfeel, right? That's why I focused on minimizing the aroma and acidity, taking a completely opposite take on roasting this summer blend compared to the regular line-ups at Kurasu.

Simply put, fast roast emphasizes aroma and acidity, while slow roast maximizes sweetness and mouthfeel. Though the outer layer can be a little over-roasted in a slow roast, the mild bitterness will turn out as pleasant body in cold brewing.

Next, on to the coffee beans selection. I've chosen Brazil red honey (almost natural) as the main beans. Natural processed coffee has fruity sweetness and rich mouthfeel that are perfect for cold brew. I've put all my efforts into producing a sweet Natsu Ake 2022 - Now it's up to you to enjoy it! (Of course delicious in a pour-over, too!"

Roasting and Shipping Schedule

We roast all of our coffee in Kyoto, at our Nishijin Roastery, up to twice a week on Monday and Sunday.

We then pack and ship the freshly roasted beans out on weekdays (please note that our fulfilment operation closes on weekends).

The roasting date on your coffee will be between 14 days prior to your order, and while we try our best to ship as younger roast as possible, we actually recommend you waiting at least 1 week after the roasting date to enjoy the fully developed flavor, so if you receive a very fresh roast please let the coffee rest for about a week and give it a try!

*All shipment will be done on the next Wednesday after order is received.

Cold Brew Perfection

I live in Dallas where it is very hot. So I wanted to start making Cold Brew as it’s not an area of home brewing I have explored. I bought a hario cold brew bottle and then when Kurasu announced this blend I thought I would give it a try. It is my first time buying coffee from Kurasu though I have purchased many things from them in the past. This coffee was GOOD. As cold brew it had a creamy mouthfeel, and a well rounded citrus finish. As a pourover using a Kalita 185 I relished notes of tart cherry and chocolate. I was seriously very impressed with this coffee. I started bringing the cold brew from it to work and offering to others which has prompted my boss to purchase a cold brewing bottle as well as to ask for recommendations on where to get coffee. My coffee arrived freshly roasted and I allowed about two weeks for it to settle before serving. Wonderful job Kurasu and Nishijin Roastery!!! ありがとうございます😊
