Costa Rica Gaia Artisans Red Honey

From Costa Rica’s West Valley, this H10 variety coffee is processed as a red honey. It brings bright berry-like acidity, floral aromas, and a long, sweet finish. Takuya and Ameri also reflect on how this coffee compares with the same lot they introduced two years ago.

Indonesia Tujuhenam Estate Washed

This washed coffee from Tujuhenam Estate is made from a mix of varieties, mainly Ateng Super and P88. It has an herbal aroma, orange-like acidity, and satisfying body. The video also shares the story of producer Bakti’s first export lot under his own name and a farm that continues to evolve.

V60 Hot Coffee Recipe from the Video

Preheat the V60 and rinse the paper filter. Add the ground coffee and level the bed. Pour a total of 200g of hot water in four stages:

  1. 0:00: Pour 40g for the bloom.
  2. 0:40: Add 60g, bringing the total to 100g.
  3. 1:10: Gently add 50g, bringing the total to 150g.
  4. 1:40: Gently add the final 50g, bringing the total to 200g.

When the flow slows to individual drops, remove the dripper and gently swirl the server to combine the coffee. Watch the brewing segment from 18:07 in the video.

Brewing both coffees with the same V60 recipe brings their differences into focus. The Costa Rica offers floral brightness and a sweet finish; the Indonesia brings herbal depth, citrus-like acidity, and more body.
