FAF Medium: The Taste of Balance

FAF Medium is a medium roast crafted around softness and balance.

It offers a pleasant fruitiness reminiscent of orange and plum, paired with a gentle sweetness like nuts and caramel, all lifted by a clean and refreshing acidity.

To bring out the full character of the coffee itself, we took extra care not to overshadow its natural qualities with roasty flavors— focusing instead on achieving a delicate, harmonious balance.
From the first sip while it’s hot to the sweetness that unfolds as it cools, you’ll find subtle shifts in flavor that make every moment enjoyable.

This coffee also pairs beautifully with milk— a combination where both sides complement each other, creating a wonderfully smooth and expressive harmony.

Factory's Note

Sítio Joaninha — “The Ladybug Farm”

This coffee is grown at Sítio Joaninha, a small, family-run farm in Brazil whose name translates to “Ladybug Farm.”

The farm is owned by Valdir Ferreira-san. When Valdir-san’s mother was a child, the farm was full of ladybugs fluttering among the coffee trees.
Ladybugs play an important role in protecting coffee plants from pests. But over the years, as pesticides and chemical fertilizers became more widely used, the ladybugs disappeared— not just the harmful insects, but the helpful ones too.

When Valdir-san inherited the farm from his grandparents, he made a decision: “I want to bring back the landscape my mother once knew.”

And so the family began their journey of restoration.
They removed weeds by hand, one by one. They revitalized the soil using natural compost, creating an environment where ladybugs could safely return. They also transformed the farm into a fully off-grid operation, using only solar power to minimize environmental impact.

Little by little, the ladybugs began to find their way back.
Moved by their return, Valdir-san renamed the farm “Sítio Joaninha” and embraced the ladybug as a symbol of their commitment to regenerative agriculture.

This coffee carries the spirit of that dedication— a family working hand in hand with nature,
restoring life to the land, and nurturing an environment they hope to pass on beautifully to the next generation.

Exporter's Note

FAF (Fazenda Ambiental Fortaleza) Coffees has been promoting organic and sustainability-focused agriculture since 2002, bringing together like-minded producers to grow a community centered on sustainable farming.
In 2006, they began a partnership with Sítio Joaninha, a highly sustainable 6-hectare farm that embodies the core principle of regenerative agriculture: leaving the land healthier than before.

Solar Power
Through their investment in specialty coffee, the farm was able to install solar panels that now supply electricity to both the family home and the micromill.

Biodigester System
The farm also invested in a biodigester to manage waste from their small pig operation. The system processes manure and captures methane produced during decomposition, which is then used as gas for cooking and other household needs.

Regenerative Agriculture
Under Valdir-san’s leadership, the farm has eliminated the use of pesticides and transitioned fully to regenerative practices—focusing on restoring soil health and rebuilding and caring the ecosystem.
