This decaf from Ethiopia’s Sidamo region showcases a surprisingly clear sense of terroir—something you wouldn’t normally expect from a decaf coffee.
In many cases, the decaffeination process strips away much of the coffee’s inherent flavor. However, this Sidamo decaf retains the floral aromatics and stone-fruit character that are naturally derived from its origin and variety.
It is rare and truly special to come across a decaf coffee of this quality.
In roasting, we took extra care not to apply excessive heat to the loosened fibers caused by the decaffeination process. By roasting gently with lower heat over a longer time, we avoided underdevelopment while minimizing the distinctive “decaf” aroma. The result is a clean, well-balanced cup that highlights the origin’s character and is a pleasure to drink.
