This is the new crop from Baanmai, Thailand, produced by our favorite couple- Ayo-san and Mika-san. This year marks our second year working with them.
Ayo-san’s family originally grew not only coffee but also various other crops such as tomatoes.
After marrying Mika-san, however, they gradually shifted their focus toward coffee as their main crop.
Mika-san’s older sister, Jenny-san—one of the founding members of the Thai coffee shop Akha Ama Coffee—has been providing them with continuous guidance on coffee production, which has helped their quality improve year after year.
This lot is a mixed variety with Catuai as the primary cultivar, processed using the natural process method.
Just like last year, their coffee offers a clean cup with bright, plum-like acidity and a gentle sweetness reminiscent of cashew nuts.
For roasting, we took a slightly deeper approach to bring out cacao-like notes and to ensure a profile that pairs well with milk.
This coffee conveys the care and craftsmanship of the producers through every sip- we hope you’ll enjoy this remarkable lot, that celebrates another proof of the bright future ahead for Thai coffee.
