This month’s #KurasuPartnerRoaster is PostCoffee from Tokyo. Starting as an online service with the mission of “connecting consumers with delicious coffee in the shortest possible distance,” PostCoffee now also operates physical locations at Shimokitazawa (which serves as both office and cafe) and at Daimaru Tokyo Station, where they continue to propose ways to enjoy coffee as part of everyday life- something they describe as making coffee “like an infrastructure.”

One of PostCoffee’s distinctive features that embodies their brand philosophy is how they expand the entry point into the coffee experience. Through their “Coffee Diagnosis,” which helps uncover individual preferences, customers are guided toward coffees that match their mood and lifestyle. Rather than focusing only on roast levels such as light, medium, or dark, the diagnosis includes casual questions like “When do you want to drink coffee?” or “What kinds of sweets do you like?”—making the experience approachable and intuitive.
Another characteristic is their speed. Orders placed by 3 p.m. are shipped the same day and typically delivered to the mailbox the following day. From discovery to delivery, PostCoffee designs the experience so that good coffee fits naturally into everyday life.
We spoke with Taniguchi-san, the roaster at PostCoffee. Having loved coffee since his teenage years, he entered the world of roasting to become more deeply involved with coffee. After learning roasting in his hometown of Hokkaido, he began his career as a roaster at Woodberry Coffee in Tokyo, and later joined PostCoffee in June 2023.

“Roasting is a craft where there’s no single correct answer,” says Taniguchi-san. “That’s exactly why your own experience and the tools you’ve developed become your expression.”
When creating their roast profiles, the team focuses on a clean cup, mouthfeel, sweetness, and overall drinkability. Rather than chasing flashy flavors, they first focus on building clarity and a pleasant texture without unwanted elements, allowing the coffee’s natural character to emerge. They also keep in mind that coffee will be brewed in many different environments across Japan, with varying water qualities. With this in mind, they tend to extend development slightly and aim for a roast that minimizes the difference between the exterior and interior of the bean. This approach helps maintain balance even with shorter extraction times, making the coffee easier to brew well.
