Learn to make our versatile & super aromatic Spiced Cascara Syrup.
Ingredients:
- 30g cascara
- 300g water
- 2-star anise
- 1 cinnamon stick
- 16 cloves
- 8 cardamoms (cut in half with scissors)
- 5 juniper berries
- 20 black peppers (crushed)
- Lemon slices from half a lemon (with zest)
- 15 g ginger slices
- 40 g lemon juice
- 1,5 g nutmeg powder
- Sugar (measure out 70% of the extracted Cascara liquid’s weight in sugar)
Step by step:
- Combine the 30g of cascara and 300g of water in a pot. Bring it to a boil, turn off the heat, let steep for 5 minutes, and strain.
- Return the liquid to the pot and add the following spices:
2-star anise
1 cinnamon stick
16 cloves
8 cardamoms (cut in half with scissors)
5 juniper berries
20 black peppers (crushed)
Then bring it to a boil.
- Proceed by the following ingredients to the pot:
Lemon slices from half a lemon (with zest)
15 g ginger slices
Cook the mixture over low heat for 10 minutes.
- Add the rest of the ingredients:
Sugar (measure out 70% of the extracted Cascara liquid’s weight in sugar) 40 g lemon juice
1,5 g nutmeg powder
When the sugar dissolves, turn off the heat.
- Let sit in the fridge overnight, strain, and voila!
