Roaster's Note

People say there is a flavor that's unique to Lisandro-san's coffee, calling it "Lisandro flavor"- and I think I'm starting to see what they mean.
Last year, we've got Castillo from Lisandro-san, and even though it's Variedad Colombia we have received this year, I am getting this common vibe between the two.
The image color we picked to discribe last year's Castillo was blue, and it's green for Variedad Colombia this year- and more I think of those two, the more blue-green Venn diagram in my mind becomes.
It's still quite difficult to put that feeling into words, but let me try...

The very first thing comes to my mind about his coffee is its distictive refreshing-ness.
I'm theorizing that it is coming from how the acidity unfolds and lingers in the aftertaste.
It reminds me of a green citrus, but not a sour kind.
It also has a herby flavor that makes the cup even more refreshing.
I also find his coffee "Japanese" in some ways- the texture and the mouthfeel of the sweetness reminds me of persimmon and green tea, and it's giving "Japanese" even though the coffee is from Colombia.
To summarise, I'd say his coffee has its own kind of cadence.

I'm not sure my explanation makes much sense, but a cup is worth a thousand words- I hope you will feel Lisandro-san's work and terroir in it.
