This is the third year we have purchased a lot from the Surma area, part of the Gesha Village × Santuario Project collaboration. While we didn’t initially decide to commit to Surma, each year we cup dozens of lots from this project, and time after time, Surma stands out.
This consistency in quality reflects the meticulous care and attention that Gesha Village and the Santuario Project bring to every stage of coffee production. They don’t simply repeat the same harvesting and processing methods. Instead, they adapt their approach to the condition of the plants each year, carefully controlling fermentation and drying times to achieve the desired cup profile.
What sets Gesha Village apart is their balance between meeting customer needs with consistency and exploring experimental processes in designated sections of the farm. This dual focus is something we deeply admire and strive to emulate in our roasting approach.
Roasting beans like this can be a challenge—it’s about finding the "just-right" point. We aim to highlight the inherent brilliance of Surma’s profile without overextending or holding back. This coffee reflects our commitment to showcasing its finest qualities, delivering a roast that is bold yet balanced.
