Importer's Note

Semi-washed Pacamara was Ever-san's signature- their coffee processed in their small fermentation tank has a unique, refreshing and flamboyant flavor atypical of El Savador coffee, and it was so special that the local coffee people call that entire category of flavor similar to that "Ever-san's flavor."
Their CoE prize-winning produce last year was also the semi-washed Pacamara.

We are very lucky to share Ever-san's Pacamara again this year.
Following juicy fruitiness of fig and Japanese pear, an intense sweetness like melted brown sugar comes in waves, leaving a floral, nourishing aftertaste.
There is also a mild and well-tuned grapefruit-like acidity with herbal aroma, and a tender, black grape-like flavor as it cools down- a cup that makes you sigh in awe and satisfaction.

Since losing Ever-san to a cancer 2 years ago, his wife, Norelvia-san has been caring for their Mileydi farm, and this 22/23 crop is her creation from start to end. Moreover, her Pacamara semi-washed won the first prize of COE that year- in the world of craft, change of hands changes everything. For the Diaz family, that turning point was handled splendidly by Norelvia-san's strength and her ability to embrace the change- which is ever so inspiring and encouraging.
